Stef Talks Trash

Episode 9: Dinner with a Side of Waste

While cities across the country have looked to ban the use of plastic bags, the proliferation of single-use plastics in restaurant settings has only compounded due to COVID-19.

Still, consumers are beginning to wake up to the issue of plastic pollution in marine settings and ecosystems across the globe. Restaurants are beginning to navigate away from utensils and containers that contribute to the problem.

For Just Salad, single-use plastics were never an option. The New York-based chain of fast-casual restaurants has been encouraging the use of reusable bowls since its founding in 2006.

In this episode of Stef Talks Trash, Sandra Noonan, Just Salad's chief sustainability officer, talks about how the company has kept waste reduction in mind from the get-go. Learn more about how Just Salad's incentive program is changing consumer behavior, where producer responsibility comes into play and where sustainability in the restaurant industry is heading.
