Pikin County, Colo.'s composting program is seeing tremendous growth. Last year, it recorded its highest levels in the past six years, according to The Aspen Times.

Aspen is crafting an ordinance that would eventually prohibit food waste from entering landfills. The town has a zero-waste goal that aims to reduce the amount of organic materials sent to sites by 25 percent by 2025.

Restaurants, which produce the most organic waste, are the target entities for the initiative.
